Soup Recipe Ingredients:

Burdock Root sticks (3-4)

Vegetable Stock (2 Cups)

Cilantro (to taste)

Red Onion (personal preference)

Kale (handful)

Fresh Ginger (3-4 thin slices)

Fresh Plump Dates (3-4)

Oyster & Portobello mushrooms

White Vinegar (for soaking burdock)

Prep:

Using a vegetable peeler, peel, wash and slice burdock to your liking. Once this is done place root in a bowl containing white vinegar to serve as a secondary cleaning method. Vinegar will preserve the burdock’s pristine white color; staving off the browning effect. While the burdock soaks 3-4 minutes; slice onion, ginger, mushrooms, rinse your kale and ready your pot by pouring in vegetable stock over medium heat.

Drain and rinse burdock from bowl of vinegar, adding it to your heating pot of stock. Add onion, cilantro and ginger, allow to cook 10 minutes then add mushrooms, kale. Turn heat to a low simmer for approximately 30 minutes with a lid. As your soup finishes dice your plump dates and add them to your pot. Remove from heat. Let soup cool at least 8 minutes and serve with a smile.
